5 mug desserts to make in your microwave

Brownie in a mug has been one of my go-to desserts whenever I get a sugar craving since my mom first showed me how to make them in middle school. 

Confession: I have a huge sweet tooth.

I love all sorts of pastries, from cookies to cinnamon rolls to cakes and more. I’ve made all sorts of desserts since the Shelter in Place order went into effect, but now that my roommates have moved out, it’s hard to justify making a batch of brownies for just one person.

But I’ve found a solution: mug desserts.

Mug desserts are just single servings of the regular sweets I love to make that can be cooked in the microwave. They’re super simple, don’t take long to make and are really tasty. So here are some of my favorite recipes for you to enjoy.

Brownie

Ingredients: 4 tbsp flour, 2 tbsp cocoa powder, 2 tbsp sugar, salt, 2 tbsp melted butter, 2 tbsp milk and ¼ tsp vanilla extract

How to make it:

Mix the dry ingredients together in a mug. Add the wet ingredients in one by one until it’s mixed well. Stick it in the microwave for one minute and enjoy.

Banana bread

Ingredients: half of a banana, ¼ tsp vanilla extract, 1 tsp vegetable oil, 2 tbsp flour, ¼ tsp baking powder, 1 tsp sugar and salt

How to make it:

Mash the banana in your mug, then mix in the rest of the wet ingredients. Add in the dry ingredients one at a time until it’s thoroughly mixed. Microwave for 90 seconds, and let it cool before you eat it.

Banana bread was one of the first breads I ever learned how to bake, and I was skeptical about how any type of bread that you cook in the microwave would turn out, but this is actually delicious. I love adding chocolate chips, but it tastes good either way.

Peanut butter cookie

Ingredients: 1 tbsp peanut butter, 1 tbsp butter, 1 tbsp brown sugar, 1 tbsp white sugar, 3 tbsp flour, 1 egg and salt

How to make it:

Melt the butter and peanut butter together in your mug. Mix them together, then add the sugars and flour in one add a time, mixing well between each ingredient. Add in the egg, and then mix in a pinch of salt. Microwave for two minutes, and then let it cool.

Peanut butter cookies are my absolute favorite type of cookie, and finding a recipe to make it in the microwave has changed my life. I love it. Because this cookie is baked in a mug, it makes it more of a challenge to dip your cookie in milk, but I’ve found a solution. This might sound weird, but hear me out. Just pour the milk into the mug with the cookie and eat it kind of like cereal. I promise it works.

Chocolate cake

Ingredients: 3 tbsp flour, 3 tbsp sugar, 2 tbsp cocoa powder, ¼ tsp baking powder, salt, 3 tbsp milk and 3 tbsp vegetable oil

How to make it:

Mix all of the dry ingredients together in your mug, and then mix the wet ingredients in one at a time. Put it in the microwave 90 seconds, then enjoy.

Chocolate cake is a classic dessert, it doesn’t get much simpler than this. If you want to level it up, add a spoonful of hazelnut spread to the batter before you throw it in the microwave and do your best to cover it with batter. Boom. Chocolate lava cake. You’re welcome.

Chocolate chip cookie

Ingredients: 1 tbsp butter, 1 tbsp white sugar, 1 tbsp brown sugar, 1/8 tsp salt, ½ tsp vanilla extract, 1 egg yolk, 3 tbsp flour and 2 tbsp chocolate chips

How to make it:

Melt the butter in your mug. Add the sugars in and mix. Next, add the salt and vanilla extract. Beat in the egg yolk, then add the flour. After your dough is fully formed, mix in the chocolate chips. Throw it in the microwave for 45 seconds and enjoy.
