Fat Tuesday, Martes Gordo, Mardi Gras.

Traditionally, the day before Ash Wednesday is a day to celebrate and eat as much as you can before entering a 40 day fast for Lent. Now, many people use it as an excuse to party hard.

If you’re planning on hosting a Mardi Gras party, here are some recipes to help you pull it off.

Shrimp Po’ Boy Sliders

Shrimp po’ boys are delicious and actually pretty easy to make. The hardest part is making the remoulade sauce, which is what makes the sandwich so amazing. These are sure to be a hit at any party, not just a Mardi Gras one.

Ingredients: popcorn shrimp, dinner rolls, lettuce, tomatoes, mayonnaise, ketchup, horse radish, Creole seasoning, garlic powder, paprika and lemon juice

The first thing you’ll want to do is make the remoulade sauce. Mix one cup of mayo with 2/3 cup of ketchup and three tablespoons of horseradish. Add ½ teaspoon garlic powder, ½ teaspoon paprika and 1 tablespoon of lemon juice. Add Creole powder to taste and mix it all together.

After you’ve made the sauce, you can assemble the sliders. Heat the popcorn shrimp up according to the directions on the package. Cut the dinner rolls in half and spread the remoulade sauce on both sides. Put the shrimp, lettuce and tomato on the rolls and serve.

King Cake Cupcakes

King cake is a traditional Mardi Gras dessert, but cupcakes are easier to serve. This dessert is easy to make, you just need to remember to put the tiny plastic baby in.

Ingredients: 1 box of yellow cake mix and the ingredients on the box, cream cheese frosting, cream cheese, powdered sugar, vanilla extract and purple, green and yellow sprinkles (optional)

Prepare the cupcakes according to the directions on the box. While the cupcakes are baking, prepare the filling.

To make the filling, mix a package of cream cheese with ½ cup powdered sugar and a teaspoon of vanilla extract. Put it into a frosting bag with a frosting tip. If you don’t have a frosting bag, a resealable gallon sized plastic bag will also work. 

Once the cupcakes have cooled, fill all but one of the cupcakes with the cream cheese filling. Put the tiny plastic baby in the cupcake that you didn’t put filling in. Frost all of the cupcakes with the cream cheese frosting and decorate with sprinkles. Enjoy.

NOLA Hurricanes 

If you’re planning on serving alcohol at your Mardi Gras party, you can’t go wrong with serving Hurricanes. Just be careful because these tasty tropical drinks can get you drunk quick, and always remember to never drink and drive.

Ingredients: amaretto liquor, light rum, dark rum, orange juice, pineapple juice, lemon juice, grenadine, orange slices, maraschino cherries and ice

For each drink, pour 1.5 fluid ounces of amaretto liquor, one fluid ounce of light rum and one fluid ounce of dark rum over a glass of ice. Pour six fluid ounces of orange juice and six fluid ounces of pineapple juice over the ice and add a teaspoon of lemon juice. Mix it all together and add a splash of grenadine. Top with an orange slice and maraschino cherry. Enjoy with caution.
